Ingredients for Mumbai Vada Pav
- For Potato Stuffing
- 3- Potatoes (medium)

- 1/2 Cup- Coriander leaves

- 1/4 Cup- Seedless tamarind
- 1/2 Cup- Water
- 1/4 Tsp- Cumin seeds
- 1/4 Tsp- Ginger powder
- A pinch- Hing
- 1/4 Tsp- Alco Food's Red Chili Powder
- 4 Tbsp- Jaggery powder
- 1/2 Tsp- oil
- To taste- Salt

- Blend the ingredients used to make green chutney in a blender.
- For making sweet tamarind chutney, soak tamarind for half an hour.
- Heat the pan and add oil, cumin seeds, ginger powder, red chili powder, and hing.
- Add jaggery and salt to thicken the tamarind chutney.
- When it cools down, keep the sweet chutney in an air-tight container.
- Take boiled and steamed potatoes, and heat a pan; add oil, mustard seeds, curry leaves, and hing.
